It's that time of the year again, pumpkin everything!
Of course, everyone hears about pumpkin spice lattes, pumpkin pies, pumpkin muffins, et cetera, et cetera, et cetera.
But what about a delicious pumpkin soup so that you can put to good use all that extra pumpkin you have?

Although it’s still cold, it definitely feels less harsh than last week (and the week before that).
The severe and unusually long cold blast we just experienced was one the sharpest documented — numerous records (if not all) have been broken.
And when it gets cold (especially that cold), I have but one craving: warming and nourishing soups. There’s nothing quite like a big bowl of soup to keep your insides warm and healthy.

First of all, I need to say a big capitalized WOW!
I know this sounds a tad arrogant, but WOW is the only word that comes to mind to describe this (Vegan) Creamy Curried Butternut Squash Soup.
A rich, savory, and delicious soup that is also healthy, low calorie, and super easy to make.
And you know what? It tastes like it was simmered long and low in order to develop such depth, but in reality it takes about 30 minutes to make, from start to finish.
There are layers of flavor that will first tease your palate with butternut squash delicious savory notes. Next, you discover the wonderful sweet undertone of coconut milk, making it even more interesting. Lastly, you feel the curry with its unique blend of savory and sweet spices, but not overwhelmingly so.
All in all, perfectly a balanced and wonderful soup.

Can I get a “woot, woot” for green soup?
Anyone?
No, okay, okay, I get it.
Maybe green soup isn’t the sexiest food around or will get your stomach’s rumbling. But if there’s one thing I know is that this Green Machine Soup is a surprisingly delicious and velvety soup. And after eating one bowl you’ll feel like you just did something really good for your body.
In other words, this green soup maybe even be THE sexiest food around and after trying it your body won’t get enough of it.

Let’s be real for a sec: soups are not exactly “dude food”.
Picture this: Guys get together for Football Night, Poker Night, Dude Night, whatever testosterone-filled event; maybe they went hiking/fishing/hunting and are coming back home sweaty, tired, and starving. Maybe they went to the homecoming game and are ravenous.
Whatever it was, imagine one of the dudes saying “All right boys, who wants a bowl of Light Italian Minestrone Soup?”
It doesn't sound right...
By doing so, he would set himself for ridicule, disrespect, and contempt (and I’m being gentle here!)
Dude food is fall-off-the-bones tender pork ribs slathered in a barbecue sauce, meatballs, chili cheese fries, and cans of beer we can readily shotgun, then smash on our foreheads.
Soup? Doesn’t quite fit right?

I’m totally hoarding pumpkins at the moment — I buy a butternut every time I go to the shops.
Yet not a single one of them will become a Jack-o’-Lantern (I’m so bad at carving pumpkin — no matter how hard I try they always come out lousy) nor they will be used for making pumpkin pie (I know that’s almost blasphemous to say but I’m not a big fan of pumpkin pie — the texture is just way too gloppy for me.)

Because I am, in all likelihood, about 10 years old on the inside but old enough on the outside to know that it’s better not to fool yourself or others, I’m going to admit from the start that carrot soup may not be one of the most fashionable soup there is.
Take a New England clam chowder or a French onion soup for instance: They’re classy, sophisticated, and elegant. The kind of soups that would own the runway.
But carrot soup? Carrot soup is synonym for mundane, ordinary, maybe even banal. There’s nothing fashionable about it.
Yet, in all its mundanity this particular 20-Minute Creamy Vegan Carrot Soup is hearty, satisfying, heartwarming, and incredibly delicious.

Eating soup in the summer is an act of defiance — especially during a heatwave.
I’m not talking about eating cold soups such as gazpacho or vichyssoise. I’ve never been a fan of gazpacho. It makes me wish I had tortilla chips while at the same wondering why I am eating salsa with a spoon.
I’m talking about hot soups what warm you from the inside out. Soups you crave when the wind is howling outside, snow is falling, and all you want to do is curl up on the couch with a blanket and a warming bowl of homemade soup.
But when outside it’s 95º and humid, with not even a hint of breeze, and clouds of mosquitoes hum looking for breakfast, eating hot soup means disobedience.
That’s the kind of rebel I am.

I get it, soup is not as exciting as a cookie, a cheesy casserole, or a ramen burger.
Maybe a clam chowder or creamy chicken might get your attention, but a broccoli soup?
I already know what you’re thinking: “Booooring!”
In fact, if I were to advertise to you a healthy broccoli soup, you’d probably run in the other direction screaming “Please not another greenish healthy soup!”
Still, I think that soup may be the most under appreciated category of food. There is something awesomely comforting about a bowl of piping hot soup when it’s chilly outside.
And I know for a fact that I’m not alone on this one.
The long lines at Hale & Hearty Soups are proof that soup is a favorite among many, not just me.
But that’s not the reason why I made this broccoli soup.
The reason why I made this soup is because, in general, I don’t find broccoli soups all that interesting, not even when there’s a ton of melted cheddar inside.

Pumpkin soup. Perhaps the quintessential fall/winter food. That and casseroles.
But soup warms you from the inside out, like only tea does. Especially on days where the winter wind chills you to the bone.
Not that we have experienced particularly low temperatures at my latitude so far. To the contrary, it has been a fairly mild fall/winter.
But when temperatures will be dipping below freezing (much too soon unfortunately), we’ll all take refuge under warm blankets with a bowl of piping hot pumpkin soup.
By the way, has anyone tried eating soup literally under the blankets?
I don’t think it possible. You can barely move under the blankets; sure you can read, text or watch a movie on the iPad. But eating a bowl of soup? Not feasible. Unless you find pleasure in scalding hot soup on yourself.
Which got me thinking, maybe eating under the blankets is just one of those cliche’ things they do in movies.
Like the tree outside boyfriend’s or girlfriend’s house where said boyfriend or girlfriend can climb through. Or the love at first sight + kiss under the moonlight thing. Or convincing someone minutes before the wedding that you are the one they should really be with.
Or even worse: the mad and successful dash through airport security to talk to somebody, who you have a desperate to confess your love to.
That sort of things.
Truth is, you don’t need to be under the blankets to enjoy pumpkin soup.
