Quinoa with Roasted Vegetables and Olive-Mint Pesto

As you are probably already aware, quinoa is one of my favorite ingredients to work because not only it has a great nutritional profile, it also is incredibly versatile.
You can use quinoa in a wide variety of dishes: casseroles, meatballs, salads, pizza crust or soups.
Quinoa is a superfood for many reasons. It’s gluten-free, easy to digest, packed with fiber, essential vitamins, and it’s also a complete protein (meaning that it contains all of the essential amino-acids).
Meaning that quinoa is a perfect option for anyone following a plant-based diet. Also for anyone that is trying to move from a meat centered diet, but is concerned about their protein intake.

I’ll admit it, I tried to be virtuous but I totally went overboard with eating last weekend. Faced with homemade Christmas treats, it was hard to say no.
Yesterday morning I woke up feeling absolutely terrible. I actually felt like a Thanksgiving turkey: overstuffed, bloated, and even nauseated.
I was SO ready for a major detox.

“How much canned tuna can I safely consume a week?”
I get asked this question a lot — particularly at this time of year.
When it’s hot outside and we don’t feel like cooking, nothing is easier than opening a tuna can and chopping some veggies to make a great salad.
Not to mention that tuna is pretty cheap and a good source of protein and omega-3s too.

There are three phrases I want to say before I’m sprawled on my deathbed.
To be honest I don’t think I will ever be in a situation where I could actually say those phrases (i.e., very dramatic scenarios) but I still want to believe that the right occasion will come one day — hope dies last after all.
