Baked Cinnamon Sugar Apple Chips

I have a secret to tell you guys, one of my fave healthy treats to snack on are apple chips.
Crunchy, crispy, and totally addicting.
I started making them at home a couple of weeks ago, and I haven’t stopped ever since.
They are so easy and cheap to make.
Slice the apple, sprinkle with cinnamon-sugar, bake in the oven and voilà: cinnamon sugar apple chips. No-brainer.
I can say without fear of contradictions that these apple chips are the perfect year-round healthy snack. But since the beginning of fall is apple season (when prices are lowest), this is the perfect time to give this recipe a go.
And you know what’s even better? That they fill your house with the aroma of baked apple pie, without the guilt. Cool, right?
You know what’s even better? That this is super simple to make.
All you need to do is to bake the thin apple slices at low heat and you’ll get a great crunchy snack.
Don’t let the long cooking time scare you, it’s mostly hands-off.
The most important thing to make the apple chips extra crunchy and crispy, is to slice the apples real thin. If the apple slices are thick, they will turn out to be mushy.
A mandolin slicer is the perfect tool for this job, but a knife works too. Use your sharpest knife, turn the apple on its side, and slice. Some apple slices won’t be perfect, that’s totally OK.
I promise, these yummy cinnamon apple chips will disappear almost as quickly as you make ‘em.
They’re a great healthy snack, easy to take on the road, a great addition to your fall event, and perfect for a school lunch. They are fantastic also for kids who do not eat enough fruit.
Apples: it doesn’t get much healthier than this.

Ingredients
Serves 8 as a snack
3 medium apples
⅓ cup granulated sugar (I used coconut sugar)
1 tablespoon ground cinnamon (adjust to taste)
Directions
Preheat oven to 225°F (105°C) and place a rack in the middle. Line two baking sheets with parchment paper (or silicone mat). Set aside.
In a small bowl mix sugar and cinnamon. Set aside.
Using a mandoline or a sharp knife, thinly slice apples into thin rounds. As you cut, simply remove the stem and seeds, which should fall out onto the cutting board, and discard.
Spread apple slices onto the prepared baking sheets. Sprinkle half of the cinnamon-sugar over apple slices.
Bake for 1 hour, remove from the oven, flip slices, and sprinkle with remaining cinnamon sugar.
Bake for another hour.
Since all ovens differ, you may need slightly more or less time — the simplest way to see if your chips are done is to do a taste test.
Let cool completely on a rack and store in an airtight container.
