Blackberry Mint Iced Green Tea


At this point you are well aware that I love making my own iced teas and adding different combinations of fruit and fresh herbs.
So far I’ve made Rosemary-Peach, Raspberry Mint, Ginger Mint, and even a Lemon Sparkling Iced Tea.
And today I present you with some awesome, super refreshing Blackberry Mint Iced Green Tea.
Because the heat wave we’re currently experiencing in my neck of the woods is a double-whammy (with high heat and high humidity) and one of the most effective ways to cool off is to sit in the cool shade and drink a tall glass of iced tea.
Or at least that’s what I like to do!

Blackberries


This is such a simple recipe.
In a nutshell, I started by allowing the green tea bags and some fresh mint leaves to steep in boiling water for 10 minutes.
Meanwhile, with the blackberries I made a simple syrup.
Once the tea and mint were done steeping, I discarded the tea bags and mint leaves, and combined the tea mixtures with the blackberry syrup.
I allowed the mixture to cool down, then served the tea over ice with some additional blackberries and garnished with a mint sprig.
So good!

Blackberry Mint Iced Green Tea


A cool and refreshing iced green tea that is super delicious, very healthy, and perfect for a hot summer day.

Ingredients
Serves 8

8 cups of water, divided
½ cup granulated sweetener of your choice (I used coconut sugar),
¾ cup blackberries
4 green tea bags
¼ cup packed fresh mint leaves

Directions

Combine 1 cup of water, sweetener, and blackberries in a medium saucepan. Bring to a boil over medium-high heat, lower to a simmer and cook until the blackberries have broken down, about 8 to 10 minutes (use the back of a spoon or a fork to break up the blackberries.)
Strain blackberry mixture through a fine sieve (or cheesecloth) into a bowl. If using a sieve, press with the back of a spoon to extract as much liquid as possible. Set aside and let cool.
Place tea bags and mint leaves in a large bowl (or a 3 quart pitcher) and set aside.
Bring remaining 7 cups of water to a boil and pour over tea bags and mint and allow to steep for 10 minutes.
When tea is done steeping, using a slotted spoon, remove tea bags and mint and discard.
Add blackberry syrup and give a good stir.
Take a taste and adjust sweetness if needed.
Place in the refrigerator until chilled.
When ready to serve, pour into ice filled glasses garnished with a couple of blackberries and mint leaves.

One serving yields 38 calories, 0 grams of fat, 10 grams of carbs, and 0 grams of protein.
