Limonada De Coco (Frozen Coconut Limeade)

Summer is in full swing and the weather is heating up all around.
For those of you who are already on vacation, good for you, I envy you so much. Because let’s face it, the city is a terrible place to be in the summer.
The hot exhale of garbage trucks, questionable drips from a/c units above your head, mounting piles of garbage simmering in the heat, crowded and smelly subway cars. Should I go on?
And though it’s true that there are a million things to do to make summer more liveable in the summer (free public pools, sprinkles parks, etc.), from July 4th on everyone that has the means to be elsewhere is, while the rest of us is slowly melting on the pavement.
But this summer - since I’m stuck in the concrete jungle - I’m going to embrace the heat. I’m going to pretend that I’m in some tropical upscale resort, so fashionable you won’t even know.
So my summer awaits, right there, in those glasses.
Limonada de Coco (or Frozen Coconut Limeade) is essentially coconut milk, lime juice, sugar, and ice blended together into what I’d probably call a white slushie but sounds — like most things — way more glamorous in Spanish.
It’s incredibly simple to make and yet the end result will knock your socks off. The most refreshing, heavenly, craveable hot-weather drink ever.
You can think of it as key lime pie in drink form.
Cold, frothy, and rich. I don’t mean to oversell this but it will almost make you feel like you’re on vacation. I said almost…

Ingredients
Serves 4
2 ½ cups crushed ice (small ice cubes work too)
1 cup full-fat coconut milk (from a can, I used BPA-free Natural Value)
Juice of 3 limes (about ⅓ cup)
2 to 3 tablespoons granulated sweetener of your choice (I used coconut sugar)
Directions
Place all ingredients in a blender and pulse until smooth and creamy.
Pour into glasses, garnish with a lemon slice and serve!
Nutrition facts
One serving yields 126 calories, 9 grams of fat, 11 grams of carbs, and 1 gram of protein.
