Raspberry Almond Thumbprint Cookies with Lemon Glaze




As I told you yesterday, I’m pretty pumped to visit the great city of Berlin.
What I’m not excited about, is packing.
I’m actually really bad at packing. I'm not a light packer to begin with; on top of that I bring things I don’t need, and I forget things I do need.
The one mistake I often make is bringing too many tees, shirts, and sweaters and not enough socks and boxers.
And I always forget about outerwear. As a result I have a humongous collection of fleece jackets and umbrellas I bought around the world.
For some reason, I’m persuaded that while I’m on holidays it won’t rain — not even when I went to India during the Monsoon. My mind is weird, I know.

I also need to carry some food with me whenever I fly — if there’s one thing I can’t stomach is plane food.
Things are usually hectic the days before leaving on a trip, and sometimes I flat out don’t feel like cooking.
But I do like having healthy and substantial food on flights.
It helps me relax and not think too much about the airplane crashing into a mountain, falling into the sea, being blown up or abducted by aliens.
So I try to squirrel various snacks into every pocket of my carry-on: such as these Mini Larabar bars, some Paleo Protein Bars, an apple, a banana, (you know healthy stuff you can bring on an airplane.) This year I’m planning on bringing with me a big batch of these Raspberry Almond Thumbprint Cookies.

Being an almond junkie, the fact that the main ingredient in these thumbprint cookies is almond flour is a big bonus.
The combo of raspberry jam and lemon glaze is legit and works like a charm with the almond.
The cookies are sweet but not too sweet, they have a bit of crunch. Plus they’re gluten-free, dairy-free, egg-free, and seriously, these cookies might save the world too. More likely they will make the flight more enjoyable.

Ingredients
Makes 18 cookies

Cookies

2 cups almond flour (I used Bob’s Red Mill)
¼ teaspoon fine grain sea salt
¼ teaspoon baking soda
3 tablespoons virgin coconut oil
2 tablespoons honey (I used this raw organic honey)
¼ cup raspberry jam (make your own paleo raspberry jam with this recipe)

Lemon Glaze

1 tablespoons coconut oil (or butter)
1 tablespoons honey
1 tablespoons milk of choice
Zest and juice from ½ lemon
¼ teaspoon pure vanilla extract

Directions

Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
In a food processor combine almond flour, salt, and baking soda.
Pulse in coconut oil and honey until a dough forms.
Scoop one scant tablespoon of dough and with dampened hands roll into balls.
Place onto the lined baking sheet about one inch apart. Wet your thumb and create an indent (be careful as the dough is sticky!)
Place ½ teaspoon of raspberry jam in each thumbprint.
Bake in the hot oven for 8 minutes. Transfer to a rack and let cool.
While the cookies are baking, mix all glaze ingredients together in a small pot over low heat until it starts to simmer. Remove immediately from heat and let sit to cool. Drizzle over cooled cookies. The glaze will set in about an hour.
Store cookies covered at room temperature for 3 days or in the refrigerator for 6 days.

Nutrition facts

One cookie yields 109 calories, 9 grams of fat, 7 grams of carbs, and 3 grams of protein.

  1. The cookies look so delicious. Have you ever heard of Go Picnic boxes? They make several gluten free varieties and are great for travel. Also, not sure what airline you are flying, but when we flew to Hawaii in April I was worried about eating on the plane just like you so yes, I stashed my own snacks in my carry on, but my hubby requested gluten free meals for me and they were amazing! Everyone was envious of my meals. So much fresher and healthier than the normal meals served.

    2. Um... I will NEVER EVER order a GF meal on a plane again. They are AWFUL. What the airlines do is lump GF/DF/low salt/low fat/whatever else into one meal. I got rice cakes TWICE, some nasty spread instead of butter, etc. On the other hand, the regular meal was great! Salad with nice balsamic/olive oil dressing, real butter (you can skip the roll), cheese and crackers (again, skip the crackers) and a nice meat/veg/potato combo. Chocolate mousse for dessert!! On the flight back it was a chicken burger: surprisingly moist and tasty, again with potatoes. I always pack extra snacks as the breakfast meal tends to be a sandwich and eating just the 'insides' just don't satisfy. These cookies would be great for breakfast!! I fly to Europe every year - Czech Republic, via Vienna, Austria.

  4. I would love these as a plane snack and just an everyday snack! I love packing for trips (I have a wardrobe spreadsheet if you want me to send it to you - it ensures that I do get to bring everything I need!) and I also hate plane food. I always pack granola bars too, homemade trail mix, and babybel cheese. Have so much fun on your trip!!

  5. I always try to bring my own food when traveling as well, though I've never been out of the country! My husband was stationed in Germany for a bit, and just loved it over there. If I liked to travel, it would definitely be a place I'd like to see. Have fun buddy!

  6. Dude - that's it! Iam getting a temp job with the TSA at LaGuardia and I am gonna confiscate these awesmazing thumbprint cookies and take them to the break room and enjoy them ALL BY MYSELF!!!! Wait...you are flying out of LaGuardia right?? If not...then which airport is it...????

  7. Mike, have a wonderful wonderful trip! I am here smiling because one of the posts I have sitting and waiting to go live is a thumbprint cookie! no drizzle, though, which now I regret, yours look so much better! nothing like a little decoration to bring full beauty to a plate of cookies!

  9. I'm jealous, Mike. I don't know which causes that - the fact you're going to Berlin or you having had these awesome cookies. Talking about clothes, that could be a great tradition to have fleece jackets and umbrellas from every country you've visited. So keep going, haha (sinister laughing).

  11. Exciting news about your upcoming trip to Berlin! There's so much online re packing, I'm sure you'll do fine. Great idea to take snacks, although I've found the food not bad at all on overseas flights.
    Your thumbprints made with almond flour look fabulous...agree with you about using almond flour. Nice glaze too!

  13. Mike, we all know that your plane won't run into a mountain in the middle of the ocean! But what might happen is that the pilots will become distracted by the sight of these amazing cookies, and then you will have to make a water landing in the middle of the Atlantic. But it's not the end of the world as you will accidentally discover the Lost City of Atlantis...which by the way will now by known as the Found City of Atlantis. See? Sometimes things just work out!   15. I'm all about light packing and snacks stowed away in my backpack and pockets. I like to grab and go - adventure awaits! I'd easily make these (swap the raspberry for strawberry) and that glaze makes it. Have a fun trip, enjoy the schnitzel & spätzle!

  18. These look sooo yummy. Berlin is a great city and don't worry about packing because they have amazing shopping over there. I agree with everyone about airplane food, it ranges from ok to absolutely disgusting. And if you have a special diet at least you can request a special meal, I have food allergies and most airlines won't allow you to list them. As I often fly on both short and long haul flights, I always pack a lunch that way I eat great tasting and healthy food when i'm hungry and not when the airline decides it's time to eat. Oh and I never forget to bring desinfecting wipes to clean the tray table as those things have more bacteria than public toilets!

  20. I made these as soon as I saw them, they are SO good! I couldn't get the first batch of lemon glaze to set up though (don't worry, we dipped our cookies in it). Trying them today, I might lessen the coconut oil this time. Thank you for the recipe, it's amazing!
