Cooking is a feel-good activity for me. I feel happy, comforted even inspired when I cook.
But just like everybody else, I’m sometimes (oh hell...let’s say “often”) too tired or don't have the time to cook.
Especially at dinner time, after a long day, when I get home all I want to do is relax.
Even I, the triathlete dude that steps into the kitchen and transforms into a culinary Bruce Lee (yup people, that’s how I see myself) waves white flag.
Back in the days, I would just open a bag of salad greens, slice a tomato, fish out a can of tuna, toss everything together, and voila’ a “super tasty” salad.
Now, I put a little more effort into it and make myself this fantastic sunny-side up egg with avocado, Sriracha and crumbled feta.
This is not really a recipe, as much as it is an idea to make a quick, easy and delicious lunch, dinner, or even breakfast.
When you're really pressed for time, sticking to a simple meal that doesn’t require much effort - such as this one - is IMO the way to go.
I don’t know about you, but I practically always have avocado, feta cheese and Sriracha in stock, not to mention eggs. Except for my vegan friends: who doesn’t have eggs in their house?
And anyone (including kids) can cook an egg.
Just like anyone can burn some potatoes.
Just like my friend Sabine’s cat Martin can’t catch a mouse (not even the mouse toy) — he’s so not the master assassin nature has designed him to be.
He’s no fun either to be honest. He just sits and hides when someone comes over. I think he spends his time judging and plotting Sabine’s demise in the night. Dunce cat.
Cat jokes aside, this recipe/idea is proof that cooking doesn’t have to be fancy of intricate, it just has to be done well.
When you put love and care in your dishes it will come through super tasty, even when it’s something super simple. As simple as opening a can of tuna.
And this dish is that simple, but oh-so-yummy.
Avocado is my favorite thing to eat with eggs. I love that creamy texture paired with eggs.
And Sriracha? Sriracha and avocado is pretty much the best pairing in the universe already, but adding salty feta makes a perfect combination.
I just had to tell you about it.
Serve with some greens on the side for a complete meal and you’re pretty much good to go.
Just five ingredients and 5 minutes stand between you and the best sunny-side up egg you’ve ever had.
I think you should try it.
Sunny-Side Up Egg with Avocado, Sriracha and Crumbled Feta Print this recipe!
Ingredients
Serves 1
1 teaspoon coconut oil (or olive oil)
1 large free-range organic egg
½ avocado, pitted and sliced
2 tablespoons crumbled feta cheese
Sriracha to taste (make your own Sriracha with this recipe)
Salt and pepper
Directions
Heat coconut oil in a small skillet over medium-high heat.
Add egg, season with salt and pepper and cook for 3 to 4 minutes until the whites are just set, and the yolk is still a bit runny (if you like your yolks more firmly set, just continue cooking.)
Transfer to a plate, top with sliced avocado and crumbled feta and slather with Sriracha to taste.
Serve!

One serving yields 303 calories, 26 grams of fat, 12 grams of carbs and 14 grams of protein.

DeleteThis is so so much better than getting take out on nights when you're tired - IMO! I gotta say avocado and eggs are an "awesmazing" combo - as are beets and eggs - IMO :)

DeleteFlipping ADORE eggs but I can no longer really eat them....... And it stinks because back when I was OBSESSED, I never had avocado, thus I never tried the pairing... So I think I want to RISK my life and jump into that yolk head first!

DeleteI eat A LOT of eggs each week, and often pair fried egg with avocado and - sorry to admit - rice crackers. They have a nutty taste that goes so well with the egg. I love Sriracha too, and let me give you another suggestion: make a little sauce with yogurt, a touch of Sriracha and salt... drizzle over avocado: NIRVANA, my friend... Nirvana

Or perhaps you are tieing knives on your shoes and pulling out some kung fu kicks to dice potatoes. Either way, you are pretty super cool in my mind right now. Just like this recipe is super cool.
